Cooking with Unmis: Assorted Meat Stew

  • Beef (different parts of the cow or goat; including tripe, heart, legs, hides, etc.)
  • Oil (your choice)
  • Onions
  • Beef bouillons
  • Garlic
  • Garlic Salt or Iodized Salt
  • Italian Seasonings, Bay leaves, (optional)
  • Thyme, Curry, White Pepper, Paprika

Cooking Instructions:

Boiling the Meats

  1. Cut the beef parts into chunks (small to large chunks as desired)
  2. Place in cooking pot
  3. Slice in the onions
  4. Add garlic, garlic salt, salt, Italian seasoning, and the 2 beef bouillons
  5. Add 2-3 cups of water depending on the quantity of the beef
  6. Cover pot with lid
  7. Place on medium to high
  8. Boil for 20-30 minutes or till tender.

Making the Stew

  1. Pour 2-1/2 – 3 cups of My Sauce in a pot
  2. Slice a 1/4-1/8 onion
  3. Add spices (curry, thyme, white pepper, & paprika) as desired
  4. Add a cup of oil
  5. Cover and cook for 15-20 minutes or until the raw smell of pepper (from My Sauce) is gone.

Your Assorted Meat Stew is ready. Eat over rice and/or add over Egusi or Ewedu when eating the Solids (such as Fufu, Eba, Farina, Amala, etc.)
